This coffee comes from cherries harvested by some of the 1,070 producers who are members of the Coope Dota cooperative. Once received, the cherries are sorted by size and then pulped using one of the 12 pulpers. They then undergo a dry fermentation process for 16 to 18 hours (honey process) before being washed with clear water to remove all the mucilage.
The grains are then slowly dried in pre-dryers and guardiolas at low temperature (less than 40°C), until a stable moisture content of 11% is reached.
A precise, clean and controlled honey coffee, reflecting Costa Rican know-how.
